This included running on-site trials, fine-tuning pastry techniques, and integrating a complex supply chain — including a dedicated poultry supplier specified by the client.

At Lewis Pies, we’re always on the lookout for exceptional ingredients that elevate our products, and Perl Las, the award-winning organic blue cheese from Caws Cenarth, was one we couldn’t ignore.

We loved the flavour and character of the cheese and knew it could become the hero of a premium pie. So, we reached out to the team at Caws Cenarth to explore a potential collaboration and they were just as enthusiastic.

As part of our process, we visited their incredible site in West Wales, conducted a full supplier audit to meet our BRCGS AA+standards, and involved them directly in product development. Their insight helped us fine-tune the final recipe, ensuring the cheese was celebrated in all the right ways.
